The rotisserie chicken is so under rated! What's the big deal, you say? Well let me open your mind to the possibilities. The next time that you want to make a recipe or dish that involves chicken, consider the rotisserie as your chicken of choice. It is cheaper and tastes better! You get an entire chicken that is already perfectly cooked and seasoned. It costs an average of six dollars, while a pack of boneless skinless chicken from the meat section of the grocery can cost up to ten bucks! Yes, if you want to make fried chicken, you can't substitute the rotisserie. But consider these two items that I like to make with a rotisserie.....First is chicken and dumplings! You have NOT had good chicken and dumplings until you have put a whole rotisserie chicken in a pot to simmer, then taken the moist chicken off the bone, and thrown in the dumplings. The chicken is what I like to call "restaurant quality." It is moist and I just can't quite get the same result with regular chicken cutlets. Recipe number two....chicken salad! Peel the chicken off your bird, and mix with mayo. Instant and delicious chicken salad! I like to add grapes and almonds to mine and put a nice glob on a bed of lettuce. It is wickedly good. Also try a chicken casserole with rice, broccoli, and can of cream of chicken soup. The possibilities are endless!
